Food Safety
Schenk Packing Co., Inc. has maintained a strong commitment to provide safe and wholesome products to our customers.
Both of our facilities (establishment 6056 and 6056A) are federally inspected by the United States Department of Agriculture (USDA) and operate under a Hazard Analysis and Critical Control Points (HACCP) plan.
Our HACCP plan, which meets all regulatory requirements set by the USDA/FSIS, identifies and indicates how we control all food safety hazards at each processing step and the interventions that we have implemented to prevent these hazards from entering the food supply.
Our application of interventions starts when cattle are received at our harvest facility and continues until finished product is shipped to our customers. These interventions include:
- Live cattle wash
- Custom hide removal system
- Thermal pasteurization cabinet
- Multiple chlorinated spray chill applications
- Lactic and organic carcass applications
- Rapid mechanical product chilling
- Cold chain management
In an effort to further enhance our commitment to food safety, Schenk Packing has achieved SQF certification at our harvest and grinding facilities. SQF is recognized by the Global Food Safety Initiative (GFSI)* as a standard that meets its benchmark requirements for food safety.
